Did summer arrive?

Where did the time go! One minute it was spring and now it is .... Spring??? To be honest the weather this year has been horrible and summer never REALLY arrived. When I was a kid summer use to be HOT  and also pretty boring, there were no cell phones and I was not a camp person so most of my time was spent playing Cat's Cradle with my sister.

Extra yarn around? Remember Cat's Cradle? ( Google it) Loop up some spare yarn and see if you can still make the witches broom!

Now I enjoy summer for the fresh ingredients and simple to make soups and salads with a few basic ingredients. One of them being a cool Cucumber Avocado soup. I will admit cold soup did not jump out at me at first, but I was surprised at how much I enjoyed it.

Ingredients

1 Large English Cucumber ( Chilled)

1/2 A Lemon

1 Ripe Avocado

1 Tbsp Plain Yogurt

1/2 Tbsp Worcestershire Sauce

pinch of salt and pepper

1/4 Red Onion

1/2 Tomato

1/2 Tbsp Olive Oil

2-3 Basil Leaves

Cut 3/4 of the cucumber into chunks and place in a blender. Blend until smooth. Roughly chop the remainder 1/4 and set aside.

Peel and pit the avocado and place 3/4 into the blender with the cucumber. Roughly chop the remainder 1/4 and add to the roughly chopped cucumber. Squeeze some lemon juice on top and set aside.

Blend the avocado with the cucumber adding the yogurt and Worcestershire sauce until thick and smooth. Add a pinch of salt and pepper and squeeze the rest of the lemon juice into the blender. Serve immediately or chill until ready to serve.

To garnish

Roughly chop the red onion and tomato. Add to the chopped cucumber and avocado. Toss with shredded basil leaves and olive oil.

 

If summer ever does make it this year this is a definite must try.
